Homemade Queso Dip

This Queso dip is a little different than the usual “toss it in and forget about it” Mexican Cheese dips in that it is entirely made from scratch but we thought with over 40,000 likes it was a perfect crowd pleaser! The best part is even when it cools, it doesn’t clump up and get hard but stays soft and smooth so you can enjoy it on day 2 as much as at the party! Serve this with some Fritos Scoopables or Tortilla Chips and watch your guests devour every last drop!

THE MOST POPULAR RECIPE ON MY BLOG TODAY!! No prizes for guessing why… 🎉🎉🎉 . Best served warm but stays silky and soft even when it cools. Fridge cold, it’s like the cheese spread sold in jars at the supermarket (in the aisles, not fridge!). . Queso Dip (Mexican Cheese Dip) | Makes 2.5 cups / serves 10 . INGREDIENTS 2.5 cups / 225 g shredded cheese (Cheddar, Monterey Jack, Colby, etc) (🇦🇺Australia, DO NOT USE TASTY CHEESE, can make it grainy!) 1 tbsp cornflour / cornstarch 1/2 tbsp / 8 g butter 1 large garlic clove, minced 1/4 small white onion, very finely chopped (1/4 cup) 375 g / 13 oz evaporated milk (1 can, not low fat) 1 small tomato, finely diced (3/4 cup) 1/4 tsp each onion powder, garlic powder, cumin 4 oz / 113g can chopped green chile, fire roasted (or sub canned jalapeno) 1/4 cup coriander / cilantro, finely chopped 2 – 3 tbsp milk, any Salt . DIRECTIONS 1. Toss cheese and cornflour. 2. Melt butter over medium heat. Cook garlic and onion for 3 min until translucent but not browned. 3. Add tomato (including juices) and cook for 2 min. 4. Add evaporated milk and cheese. Stir, then add chiles and Spices. 5. Stir until cheese melts and it becomes a silky sauce. 6. Add salt to taste and coriander. 7. Stir in milk or water to adjust consistency (I use 2 tbsp) – the dip thickens when it cools, and milk can be added later to adjust to taste. 8. Remove from heat. Serve warm or at room temperature – it will be soft and scoopable even when it cools. Likewise, all those tasty seeds found inside of the pomegranate represent prosperity and good fortune. The more seeds you have, the more luck you’ll have in the new year.
